Competition tips and secret cuts for your next cookout.
Whether you're a seasoned grill master or a backyard enthusiast, there's always something new to learn about barbecue. In this episode, John Berry and Dolores talk with Greg from Son’s Backyard Barbecue, a seasoned competitor with a passion for helping others improve their grilling game.
Meet Greg, the Barbecue Competitor
Greg started his journey with Sun's Backyard Barbecue by cooking for himself, which eventually led him into competition steak cook-offs. He's now a points leader in the Rib Cookoff Association, thanks to his impressive array of first, second, and third-place finishes.
"Your friends might say your barbecue is the best they've ever had, but remember, it's because it was free," Greg shares, highlighting the importance of honest feedback from competition judges.
Unlocking the Secrets of Competition Barbecue
Greg emphasizes the importance of learning from competitions to enhance your backyard cooking skills. His top tips? Focus on technique and always aim to improve what you're already doing. Here are some of his key insights:
Thicker Steak Cuts: Choose steaks that are between an inch and a quarter to just over an inch and a half thick for better control and flavor.
Kosher Salt Brine: Lightly brine your steak with kosher salt for two hours, flipping it every thirty minutes to enhance the taste.
Temperature Control: Use a temperature probe and aim for your steak to reach around 80 to 85 degrees before cooking.
The Teres Major: A Hidden Gem
Delving into unique cuts, Greg introduces the teres major, a lesser-known "poor man's filet mignon." Known for its tenderness and beefy flavor, this cut is a favorite among butchers for its rich taste and small size, reminiscent of a pork tenderloin.
Greg's passion for barbecue is infectious, and his willingness to share his knowledge makes this episode a must-listen for anyone looking to up their grilling game.
